Tuna Pasta

This quick meal is great for lunch or a laid-back dinner.

Ingredients:
  • 1/2 recipe (about 1 1/2 c) tomato soup
  • 3/4 c whole wheat rotini pasta
  • 1 (5oz) can tuna
Directions:
  1. In a small pot, cook pasta as directed.
  2. Heat soup and tuna to desired temperature.  
  3. Drain pasta and combine.  Salt and pepper to taste.

Creole Shrimp

Ingredients:
  • 12 oz raw shrimp, fresh or frozen
  • 1 T olive oil
  • 1/2 T chili powder
  • 1/2 t cumin
  • 1/2 t sugar
  • 1/2 t salt
  • 1/4 mustard
  • 1/4 t thyme
  • 1/4 t pepper
  • dash celery salt*
  • dash paprika*
  • dash ginger*
  • dash allspice*
  • dash cloves*
  • dash cinnamon*
  • dash cardamom*
Directions:
  1. Preheat oven to 350.  If frozen, rinse shrimp in hot water until thawed.  
  2. Sprinkle seasonings and olive oil into a 9x9 baking dish.  Toss shrimp into pan, or mix in with fingers, covering with seasonings.
  3. Bake 10-12 minutes.  Goes well with coconut rice.
*The dashed spices represent seafood seasoning.  If you have some in the house, use that instead!

Tuna Veggie Salad

Usually we think of tuna sandwiches as tuna, mayo, and bread.  If you're going to get a little crazy, you might put pickles in there.  We have made the exciting discovery that tuna sandwiches have unlimited potential and can be mixed with a myriad of nutritious foods!  Like these:

Ingredients to taste:
  • 1 can tuna
  • mayo
  • lemon juice
  • salt/pepper
  • ripped greens
  • chopped pickles
  • chopped tomato
  • chopped apple
  • chopped celery
  • raisins
Directions:

Combine any or all ingredients with tuna in a bowl.  Spread onto sandwich bread and serve immediately or butter each side and grill on a skillet.  Alternatively, eat as a dip with pita chipstortilla chips, or other crackers.

Clam Chowder

Ingredients:
  • 1 c chopped onion
  • 1 c choppped celery
  • 2 c diced potatoes
  • 1 1/2 t salt
  • water to cover
  • 3/4 c flour
  • 1/4 c butter
  • 1 qt (4 c) milk
  • 1 7-oz can of clams
  • 2 T red wine vinegar
  • pepper to taste
Directions:
  1. In a medium pot over high heat, combine vegetables, salt, and just enough water to cover.  Bring to a boil, turn to medium and simmer until soft.  
  2. Meanwhile in a separate large pot, melt butter and blend flour.  Whisk milk into flour 1 cup at a time.  Add clams, vinegar, and strained vegetables, adding optional vegetable broth to desired consistency.  Heat through and season with salt and pepper.

Penne Pasta

This is our Special Dinner.  It all started when he made it for me on our first anniversary.  Now we only have it for Special (aka. romantic) celebrations.  It's the shrimp splurge, I guess. 

Ingredients:

  • 1 13.25-oz box penne pasta
  • ½ lb shrimp
  • ¾ c chopped mushrooms
  • 4 pieces bacon
  • 2 cloves garlic, minced
  • ½ c white grape or apple juice
  • ¾ c whipping cream
  • 3 chopped roma tomatoes
  • ¾ c chopped basil
  • ¾ c Parmesan cheese 
Directions:
  1. Cook pasta.
  2. Saute shrimp in olive oil, add mushrooms and saute a little longer, remove from pan.  Fry bacon.  Crumble bacon in pan.  Add garlic and juice and simmer 5 min.  Add cream, shrimp, and mushrooms and simmer 5 more min.
  3.  Drain cooked pasta.  Add tomatoes, basil, and parmesan cheese.  Pour sauce over all, mixing well.

Heavenly Halibut

Ingredients:
  • 2 fish fillets (preferably halibut)
  • 1/2 c parmesan cheese
  • 1/4 c soft butter
  • 3 T mayo
  • 2 T lemon juice
  • 3 T chopped green onions
  • 1/4 t salt
Directions:
1.      Preheat the oven broiler. Grease a baking dish.
2.      In a bowl, mix the Parmesan cheese, butter, mayonnaise, lemon juice, green onions, salt, and hot pepper sauce.
3.      Arrange the halibut fillets in the prepared baking dish.
4.      Broil halibut fillets 8 minutes in the prepared oven, or until easily flaked with a fork. Spread with the Parmesan cheese mixture, and continue broiling 2 minutes, or until topping is bubbly and lightly browned.
