Original recipe from family.
Ingredients:
- 1 c chopped onion
- 1 c choppped celery
- 2 c diced potatoes
- 1 1/2 t salt
- water to cover
- 3/4 c flour
- 1/4 c butter
- 1 qt (4 c) milk
- 1 7-oz can of clams
- 2 T red wine vinegar
- pepper to taste
Directions:
- In a medium pot over high heat, combine vegetables, salt, and just enough water to cover. Bring to a boil, turn to medium and simmer until soft.
- Meanwhile in a separate large pot, melt butter and blend flour. Whisk milk into flour 1 cup at a time. Add clams, vinegar, and strained vegetables, adding optional vegetable broth to desired consistency. Heat through and season with salt and pepper.
