Ingredients:
- 1 1/2 c dry brown rice
- 1 can coconut milk
- 2 1/2 c water
- 1/2 t salt
- 2 1/2 T shredded coconut
Directions:
- In a medium pan over high heat, combine all ingredients. Bring to a boil, then reduce heat to low. Simmer 1 hour or until liquid is absorbed.
- Goes well with creole shrimp.
