Coconut Rice

Ingredients: 
  • 1 1/2 c dry brown rice
  • 1 can coconut milk
  • 2 1/2 c water
  • 1/2 t salt
  • 2 1/2 T shredded coconut
Directions:
  1. In a medium pan over high heat, combine all ingredients.  Bring to a boil, then reduce heat to low.  Simmer 1 hour or until liquid is absorbed.
  2. Goes well with creole shrimp.
