Banana Oat Pancakes

Original recipe from Taste of Home.

Baby Stage 2: 8-9 months
Yield: 4 large pancakes to be ripped up for baby.

Ingredients:
  • 2 mashed bananas
  • 1 egg or flax egg
  • 1 1/2 c water or milk
  • 2 T oil or melted butter
  • 1 1/2 c flour (whole wheat works great)
  • 1 c oats
  • 2 t baking powder
  • 1 t salt (omit for baby)
  • 1 t cinnamon
  • 1/8 t nutmeg, opt
Directions:
  1. Preheat griddle to medium heat.
  2. Combine all ingredients but optionals in the order listed in a blender, mix until smooth. Alternatively, whisk dry ingredients, whisk wet ingredients, and add wet to dry.
  3. Cook as regular pancakes on hot grill.  Add more water during cooking process if batter thickens.
  4. Serve with favorite toppings.
  5. Freezes well! Or pour extra batter into muffin cups and bake as banana muffins.
  6. Also try banana muffins or other pancakes like our oatmeal wheat pancakes, our favorite pancakes, and grinchcakes or shamrock pancakes.
For entire family: tweak these pancakes to better suit the rest of the family.  Substitute milk for some or all of the water, replace butter with olive oil.
