Flax Eggs

Original recipe from Bonzai Aphrodite.

First, know this is not going to provide the same binding qualities as a real egg.  But it will try.

It will also be cheaper than a real egg and add a yummy nutty flavor.  It's safe to use in baby recipes, since you often don't want to introduce whole eggs to your baby until around 8-9 months (read here for more info on infants and eggs).  Fresh ground flax seeds work best, and you can use a blender, coffee grinder, or other tools to grind them. 

Ingredients for 1 "egg":
  • 3 T water
  • 1/2 T flax seed (unground)
Directions:
Grind flax seed into a fine powder.  Add water and blend well.  Use in place of regular eggs when baking.

Remember to store ground and unground flax seed in the fridge or freezer.

For baby, use flax eggs in cooking banana pancakes or pumpkin pancakes.
