Favorite Pancakes

Pictured: whole wheat pancakes topped with syrup and Christmas pecans.

Original recipe from family.

Yield: about 10 large pancakes (some to freeze!)

  • 1 1/2 c milk
  • 4 c flour (whole wheat works great!)
  • 2 t salt
  • 2 t soda
  • 2 t baking powder
  • 1/4 c sugar
  • 1/4 c oil
  • 2 eggs
  • 1/4 c vinegar
  • water to desired consistency (≈ 2 c)
  • opt, to taste: blueberries, banana slices, pecans, etc.
  1. Preheat griddle to medium heat.
  2. Combine all ingredients but optionals in the order listed in a blender, mix until smooth. Alternatively, whisk dry ingredients, whisk wet ingredients, and add wet to dry. 
  3. Fold in optional ingredients, or wait and sprinkle them on with syrup.
  4. Cook as regular pancakes on hot grill.  Add more water during cooking process if batter thickens.
  5. Top with favorites: hot fruit topping, Christmas pecans, broken berries, etc.
  6. Freezes well!
  7. Also try oatmeal wheat pancakes.
