Ingredients:
- 3/4 c quick oats
 - 1 c water or milk
 - 1 t vanilla
 - 2 T oil
 - 1 egg (try flax eggs)
 - 3/4 cup whole wheat flour
 - 1 T sugar
 - 1 1/2 t baking powder
 - 1/3 t baking soda
 - 1/3 t salt
 
Directions:
- Mix oats with wet ingredients, let sit 5 min. Sift dry ingredients and mix together, cook as regular pancakes.
 - Top with fresh fruit or freezer jam instead of syrup!
 - Yield: 3 large pancakes.
