Ingredients:
- 2 c packed fresh or frozen spinach
- 2 c milk
- 2 eggs
- 2 T oil
- 2 c flour
- 2 T sugar
- 2 t baking powder
- 1 t baking soda
- 1 t salt
- opt: chocolate chips to taste
- opt: mint syrup
Directions:
- Preheat griddle to medium heat. *If making mint syrup, whip that up first so it can chill while the pancakes cook.
- Combine all ingredients (except the optionals) in a blender, blend until smooth.
- Cook as regular pancakes on hot grill, shaping shamrocks for St. Patrick's Day. Sprinkle in chocolate chips if desired.
- Add more milk or water during cooking process if batter thickens.
- Serve with the green mint syrup below!
Mint Syrup
Ingredients:
- 1 c boiled water
- 1 t pectin
- 3/4 c sugar
- green food color to taste
- 1-2 drops of mint extract
Directions:
- In a small pan over high heat, bring all ingredients but the mint extract to a boil.
- Boil heartily for 1 min.
- Remove from heat and add the mint extract. Chill in fridge at least 10 minutes before serving.
