Pictured: mushroom rice with roasted squash and pita.
- 2 c cooked (with bouillon) lentil rice or plain rice
- 1 can cream of mushroom soup
- 1 c chopped mushrooms
- 1 onion, chopped
- 1/4 c melted butter
Directions:
- Preheat oven to 350.
- Combine all ingredients in an 8x8 casserole dish. Cover, bake 60 minutes.
- Serve with chicken, roasted vegetables, a salad, mashed potatoes, etc.
