Mashed Potatoes

Original recipe from family.  


Ingredients:
  • 4-6 potatoes
  • 1/2 t salt
  • 1/4 c sour cream (two big scoops)
  • 1/4 c butter (one big scoop)
  • 1-2 T green onions, sliced
  • salt/pepper to taste
Directions:
  1. Fill a medium saucepan halfway with water & place over medium high heat.  Add 1/2 t salt.
  2. Cube potatoes (pealing optional) and dump into water.  Cook on a boil on medium for 15-20 minutes or until tender when poked.  
  3. Drain water, mash potatoes with a fork, pastry blender, masher, or other appliance.  Add remaining ingredients and adjust seasonings as needed.
For baby:
Stage 3: 10-12 months
  1. Cook potatoes as directed.  Drain water, mash potatoes and add only the butter (omit sour cream, milk, green onions and salt/pepper).  Mix with other vegetables and cheese as desired.
