Waakye


Waakye (pronounced WA-chee) is a meal from Ghana that Mark loves.  It has a lot of flavor and has become a favorite for both of us, although the toppings are a little ridiculous.  Spaghetti?  I promise, it's what they do!  I prefer just the boiled egg (which also sounds weird, but really it's sooo good!).  Original recipe from Ofo's Sisterlocks.

Ingredients:
Directions:
  1. Cook rice with bouillon in about 1 1/2 c water, drain and mix with beans.  Set aside.
  2. In a large saucepan over med heat, saute onions and garlic.
  3. Add tomatoes, ginger, garlic, and cayenne pepper.  Simmer until thickened.
  4. Serve sauce on rice/beans with optional toppings.  Also goes well with a salad.
