Waakye (pronounced WA-chee) is a meal from Ghana that Mark loves. It has a lot of flavor and has become a favorite for both of us, although the toppings are a little ridiculous. Spaghetti? I promise, it's what they do! I prefer just the boiled egg (which also sounds weird, but really it's sooo good!). Original recipe from Ofo's Sisterlocks.
Ingredients:
- 1 c dry rice
- 1 1/2 c cooked black eyed peas (or 1 can)
- 4 t bouillon
- 1 T olive oil
- 1/2 onion, chopped
- 2-4 garlic cloves, minced
- 3 c (2 cans) diced tomatoes
- 1/4 tsp ginger
- 1/8 tsp cayenne pepper
- salt/pepper to taste
- opt: boiled egg
- opt: cooked spaghetti noodles
Directions:
- Cook rice with bouillon in about 1 1/2 c water, drain and mix with beans. Set aside.
- In a large saucepan over med heat, saute onions and garlic.
- Add tomatoes, ginger, garlic, and cayenne pepper. Simmer until thickened.
- Serve sauce on rice/beans with optional toppings. Also goes well with a salad.
