Sweet Potato Lentil Curry

Sweet Potato Lentil Curry from The Daily Green
Ingredients:
- 2 T olive oil
 
- 2-3 sweet potatoes, peeled and diced
 
- 2 stalks celery, diced
 
- 1 large onion, diced
 
- 1 garlic clove, minced
 
- 1 T curry powder
 
- 1/2 T ginger
 
- 3 1/2 tsp chicken bouillon
 
- 1 tsp cumin
 
- 1 tsp coriander
 
- 1 tsp salt
 
- 1/8 tsp cayenne pepper
 
- 8 c water
 
- 1 c dry lentils, picked through and rinsed
 
- 1 c dry brown rice
 
Directions:
- In a large pot over medium heat, warm oil.  Add vegetables and saute 5-10 min.  
 
- Add remaining ingredients, bring to a boil.  Reduce heat to low and simmer 40-50 min.
 
- Alternatively, combine all ingredients in a crock pot and cook on low 4-6 hours.
