Sweet Potato Lentil Curry

Sweet Potato Lentil Curry from The Daily Green

Ingredients:
  • 2 T olive oil
  • 2-3 sweet potatoes, peeled and diced
  • 2 stalks celery, diced
  • 1 large onion, diced
  • 1 garlic clove, minced
  • 1 T curry powder
  • 1/2 T ginger
  • 3 1/2 tsp chicken bouillon
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp salt
  • 1/8 tsp cayenne pepper
  • 8 c water
  • 1 c dry lentils, picked through and rinsed
  • 1 c dry brown rice
Directions:
  1. In a large pot over medium heat, warm oil.  Add vegetables and saute 5-10 min.  
  2. Add remaining ingredients, bring to a boil.  Reduce heat to low and simmer 40-50 min.
  3. Alternatively, combine all ingredients in a crock pot and cook on low 4-6 hours.
  4. Serve plain or with bread/toast.
