Summer Salad

Pictured: kale, collards, dandelion greens, mushroom, tomato, cucumber, wild onion, croutons, egg, and haloumi cheese.

Giant salads make fantastic summertime lunches and dinners, especially when the ingredients can come straight from your backyard!  Add chopped chicken, eggs, cheese, and croutons to make it more hearty, and salads can be a meal in themselves!

  • raisins or chopped grapes
  • chopped apple

Directions:
  1. Chop ingredients to preferred size.  Serve combined in a large bowl, in separate bowls and build your own, or make up the salad right onto the plates.  
  2. Also try salad wraps.
