Giant salads make fantastic summertime lunches and dinners, especially when the ingredients can come straight from your backyard! Add chopped chicken, eggs, cheese, and croutons to make it more hearty, and salads can be a meal in themselves!
Optional ingredients
Vegetables:
- lettuce
- other greens of choice
- onion or green onion
- tomato
- dried tomato
- cucumber
- mushrooms
- pepper
- celery
- sprouts
Fruits:
- raisins or chopped grapes
- chopped apple
Protein:
- shredded chicken or turkey
- boiled egg, chopped
- cheese
- chopped nuts (walnuts, pecans, sunflower seeds, peanuts, almonds)
- maple roasted walnuts
- bacon
Other:
Directions:
- Chop ingredients to preferred size. Serve combined in a large bowl, in separate bowls and build your own, or make up the salad right onto the plates.
