Yield: 15-20 large pancakes (some to freeze!)
Ingredients:
- 1 1/2 c milk
- 1/4 c oil
- 1/4 c vinegar
- 2 eggs
- 1/4 c sugar
- 4 c flour (whole wheat works great!)
- 2 t salt
- 2 t soda
- 2 t baking powder
- water or milk to desired consistency (≈ 2 c)
- optional, to taste: berries, diced apple, banana slices, pecans, etc.
- Preheat griddle to medium heat.
- Combine all ingredients but optionals in the order listed in a blender, mix until smooth. Alternatively, whisk dry ingredients, whisk wet ingredients, and add wet to dry.
- Fold in optional ingredients, or wait and sprinkle them on with syrup.
- Cook as regular pancakes on hot grill. Add more water during cooking process if batter thickens.
- Top with favorites: hot fruit topping, Christmas pecans, broken berries, etc.
- Freezes well!
- Also try oatmeal wheat pancakes.
