Ingredients:
- 1-2 c burrito beans or taco lentils
- 1/2 c salsa or to taste
- 1 1/2 c (1 can) corn
- 2-4 T sour cream
- 1/2 T taco seasoning
- nacho cheese or cheddar cheese to taste
- opt: sprouts
- opt: 2 tomatoes, chopped
- opt: olives to taste
- opt: sliced green onions
- guacamole to taste
Directions:
- Preheat oven to 400.
- Mix beans, salsa, and corn in a 9x9 casserole dish. In a separate bowl, mix sour cream and taco seasoning. Spread over beans. Spot with cheese and optional items.
- Bake 10-20 min or until cheese is bubbly.
- Serve with greens, guacamole, and tortilla chips.
