Steamed Root Vegetable for Baby

Original recipe from Annabel Karmel's book Top 100 Baby Purees.

Introduce all baby foods one at a time.  After four days of baby successfully eating one new food, a new food may be mixed with the old.

Stage 1: 6 months
  • carrot
  • sweet potato 
  • rutabaga
  • parsnip 
Stage 2: 6-9 months
  • beets 
  • turnips
  • onions (blend this with other vegetables baby likes)
  • garlic (blend this with other vegetables baby likes)
Ingredients:
  • 1-2 root vegetables, peeled and chopped*
  • water
  • opt: real unsalted butter*
 Directions:
  1. Place vegetables in pot and add just enough water to cover.  Bring to a boil over med heat, reduce to a low simmer, and let cook 8-15 min.  
  2. Drain vegetables but reserve cooking water.  Add to a blender with 1-2 T cooking water.
  3. Blend to desired consistency, making sure to blend out all chunks.  Add optional butter* and more of the cooking water as necessary.
  4. If desired, thicken your puree with baby cereal as long as your baby has already been introduced to cereal.
  5. Freeze or refrigerate extra baby food.
*Be sure to introduce foods one at a time to baby, including butter.  For example, try this recipe with sweet potato alone first, sweet potato and butter second, then sweet potato, carrot, and butter third.
