This makes a delicious dinner or breakfast!
Ingredients:
- 6-8 potatoes, shredded or diced
- 1/2 cup melted butter
- 1-2 c plain yogurt, sour cream, or combo
- ½ c chopped onion
- 1 t salt
- 1/4 t pepper
- 1/4 c bread crumbs or 1 c croutons, or to taste
- 1 c white bean puree, opt
- Shredded cheese to taste
Directions:
- Preheat oven to 350.
- In a large bowl, combine all ingredients but cheese. Pour into a 9x13 baking dish and top with desired amount of bread crumbs/croutons and cheese.
- Cover, bake 40 minutes. Remove cover and crisp for 5 min more.
