Esther's Waffles


Soooo hearty and delicious!  These waffles are our top choice for a conference Sunday breakfast of waffles with strawberries (or hot fruit topping!) and whipped cream. Our favorite way to make them is with this stove-top cast iron waffle maker

Original recipe from Esther.

Yield: ~4 large waffles or ~10 small (stove top kind).

Ingredients:
  • 3 egg yolks
  • ½ c oil
  • 2 c milk or yogurt or water, or a mix of two :)
  • 3 egg whites
  • 2 c  whole wheat flour
  • 1 T sugar
  • 2 tsp baking powder
  • 1 tsp soda
  • 1 tsp salt
Directions:
  1. In a small bowl, crack egg whites.
  2. In a medium bowl, blend remaining ingredients.
  3. Beat egg whites until stiff; fold into batter.  
  4. Cook for desired time in waffle iron.
  5. If using stove top cast iron (that is seasoned):
    1. Heat top and bottom irons at ~4 (just below med) on different plates.
    2. Spray or brush both irons with oil. 
    3. Pour a generous 1/2 c batter onto one iron, hook the two together and fold down. 
    4. Cook 1-2 min, flipping for half that time. 
    5. Between each waffle, replace each cast iron piece to its own burner to keep warm. Before starting next waffle, wait until pieces are hot enough (top pan should be steaming--reach this quickly by turning it up to 7 to re-heat), spray/brush with oil and repeat. 
  6. Enjoy!
