Oh, the first real frost that throws the garden to a sudden halt. Not everything can be salvaged, but green tomatoes are hardly useless. This yummy salsa stand-in will take care of every last one!
Ingredients:
- 2 lbs green tomatoes
- 1 red pepper, diced
- 1 onion, diced
- 1 green apple, diced
- 6 cloves garlic, minced
- 1 c apple cider vinegar
- 3/4 t salt
- 1 t dried cumin
- cayenne pepper to taste
- Chop fruits and vegetables.
- In a large pan over medium heat, combine all ingredients. Bring to a boil, then turn heat to low and simmer 1 hour.
- Blend all or part to desired consistency. Store in fridge or freezer.
- Serve in place of salsa on burrito beans, taco lentils, taco salad, quesadillas, taco pizza, etc.
