Green Tomato Chutney

Oh, the first real frost that throws the garden to a sudden halt.  Not everything can be salvaged, but green tomatoes are hardly useless.  This yummy salsa stand-in will take care of every last one!

Ingredients:
  • 2 lbs green tomatoes
  • 1 red pepper, diced
  • 1 onion, diced
  • 1 green apple, diced
  • 6 cloves garlic, minced
  • 1 c apple cider vinegar
  • 3/4 t salt
  • 1 t dried cumin
  • cayenne pepper to taste
Directions:
  1. Chop fruits and vegetables.  
  2. In a large pan over medium heat, combine all ingredients.  Bring to a boil, then turn heat to low and simmer 1 hour. 
  3. Blend all or part to desired consistency.  Store in fridge or freezer.
  4. Serve in place of salsa on burrito beans, taco lentilstaco salad, quesadillas, taco pizza, etc.
