Tomato Lentils

Ingredients:
Directions:
  1. Heat oil in a large pot over medium heat.  Saute onion, pepper, and garlic.  Add remaining ingredients, bring to a boil.  Reduce heat to low and simmer about an hour, until lentils are soft and desired thickness is reached.
  2. Serve over brown rice, toast, pasta, baked potatoes, spaghetti squash, or as a side.
