Ingredients:
Caramel:
- 4 T butter
- 1 1/4 c brown sugar
- 3 T flour
- 3/4 c corn syrup
- 1 can evaporated milk
- Heat pecans and 3 T butter in microwave 3-4 min, stirring twice, or until lightly golden. Set aside.
- In a 4 cup bowl, melt second 4 T butter. Whisk in brown sugar, flour, and corn syrup. Stir in milk. Microwave 3 1/2-6 min, stirring every minute, until sugar is dissolved. Open microwave door and let sit 2 min (or remove from microwave, but bowl will be HOT).
- Stir in pecans, or keep separate for individual taste. Serve hot or cooled over ice cream. Or over a hot chocolate chip cookie. Or sliced apples...or anything, really. :)
- Yield: 3 cups. Store in refrigerator.
