Pictured: honey oat cream cookies topped with orange cream cheese frosting and a sprinkling of cinnamon.
Ingredients:
- 1 c butter
- 1/2 c brown sugar
- 1 c honey
- 2 eggs
- 2 t vanilla
- 1 T molasses
- 1/4 t maple extract
- 3 c oats, blended fine
- 2 c flour
- 1 t soda
- 1/2 t salt
- 1/2 t pumpkin pie spice
- opt: toffee bits for topping
Directions:
- Beat butter and sugar. Add remaining wet ingredients and beat. Add dry ingredients.
- To make dough workable, refrigerate for at least 1 hour.
- Preheat oven to 325.
- Drop dough by spoonful into 12 balls on cookies sheet. Press down and shape into circles. Press a few optional toffee bits into top.
- Bake 9-11 minutes. Let cool.
- Whip up cream cheese frosting with 1/4 t cinnamon and optional orange food coloring. Spread over cookies.
