Honey Oat Cream Cookies

Pictured: honey oat cream cookies topped with orange cream cheese frosting and a sprinkling of cinnamon.

Ingredients:

  • 1 c butter
  • 1/2 c brown sugar
  • 1 c honey
  • 2 eggs
  • 2 t vanilla
  • 1 T molasses
  • 1/4 t maple extract
  • 3 c oats, blended fine
  • 2 c flour
  • 1 t soda
  • 1/2 t salt
  • 1/2 t pumpkin pie spice
  • opt: toffee bits for topping

Directions:

  1. Beat butter and sugar. Add remaining wet ingredients and beat. Add dry ingredients.
  2. To make dough workable, refrigerate for at least 1 hour.
  3. Preheat oven to 325.
  4. Drop dough by spoonful into 12 balls on cookies sheet. Press down and shape into circles. Press a few optional toffee bits into top.
  5. Bake 9-11 minutes. Let cool.
  6. Whip up cream cheese frosting with 1/4 t cinnamon and optional orange food coloring. Spread over cookies.
