This makes a great breakfast or dinner! Mark once brought home half an Italian sausage sandwich with at least a 1/2" slab of sausage on it. He couldn't finish it at lunch, and neither of us could finish the leftovers. The next day I chopped up the sandwich to make this delicious casserole! We fed the whole family and snuck some veggies in besides. ;)

Ingredients:
- 1/3 lb sausage
- 1/2 onion, chopped
- 1 c chopped mushrooms, opt
- 4-6 cups hearty bread, cubed (about 8-10 slices)
- 1 c ripped greens, opt
- 6 eggs
- 1 t salt
- 1 t dried mustard
- 2 c milk
- shredded cheese to taste
- Preheat oven to 350. In a large skillet over med heat, brown sausage, onion, and optional mushrooms.
- In a 9x13 pan, mix bread cubes, ripped greens, and sausage/veg mixture.
- In a medium bowl, whisk eggs, salt, mustard, and milk. Pour over bread cubes until well soaked.
- Top with shredded cheese to taste. Bake 45-60 min. Alternatively, cover with foil and let sit in fridge overnight before baking.
