Ingredients:
- 1 T olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 1/2 t rosemary
- 3 c (2 cans) cooked white beans
- 1 t apple juice concentrate
- 1/8 t cayenne, or to taste
- 1-2 t salt
- pepper to taste
- Preheat oven to 350 (for optional warm dish).
- In a medium skillet over medium heat, heat oil. Saute onions, garlic, and rosemary.
- Scrape mixture into a food processor and add remaining ingredients. Pulse until smooth. Serve cool or continue to next step.
- Grease a 9x9 baking or pie dish and smooth bean mixture into dish. Bake until hot, 20-25 min. Serve with olives, vegetables, pitas, or chips.
