Pictured: spicy creamy wild rice with sauteed summer squash.
Ingredients:
- 1 T olive oil or butter
- 1/4 diced onion
- 1/4 t salt or to taste
- 1/4 t pepper
- 1/8 t cayenne pepper (omit for children)
- 1/2-1 c milk
- 2 c cooked wild rice
Directions:
- In a medium pan over medium heat, melt butter. Add onion, saute until soft.
- Add remaining ingredients, simmer until milk thickens, about 5 min.
- Serve with lemon pepper chicken and/or sauteed vegetables.
