Original recipe from NPR.
Ingredients:
- 1 unbaked pie crust made with 1 c wheat flour
- 1/2 T olive oil
- 2 T diced onion
- 1 garlic clove, minced
- 2 eggs
- 1 1/2 c milk
- 1/3 c cottage cheese
- 1/2 t salt
- 1/2 t pepper
- 3 c ripped greens (prepared nettle leaves preferred)
- Parmesan cheese to taste
Directions:
- Preheat oven to 350.
- Heat oil in a small skillet over medium. Saute onions about 3 min, add garlic and saute 1 min more.
- In a medium bowl, whisk eggs. Add milk, cottage cheese, sauteed onion, salt, pepper, and greens. Pour into pie shell, sprinkle with Parmesan cheese.
- Bake 45-60 min, until center is solid when pan is jiggled. Let cool 5-10 min before serving.
