Ingredients:
- 1 T olive oil
- 1/2 onion, chopped
- 2 garlic cloves, minced
- 1/4 cup carrots, peeled and grated
- 1/2-1 t chili powder
- 1 t ground cumin
- 1 1/2 c (1 can) cooked black beans
- 1-2 T spicy mustard
- 1 T soy sauce
- 1-2 tablespoons tomato paste
- 1 c (1/2 can) corn
- 3/4 c quick oats (opt: ground fine in blender) or bread crumbs
- salt and fresh ground pepper, to taste
Directions:
- Heat oil en a large skillet over medium heat. Saute onion 5 min, add garlic and saute a minute more. Add carrot, chili powder, and cumin and turn heat to low.
- Mash beans with mustard, soy sauce, and tomato paste. Mix in sauteed vegetables, corn, oats, and salt/pepper.
- Shape about 6 patties using a peanut butter lid (or other dish of similar size) lined with plastic wrap. Freeze patties in sealed baggies for later use or continue to next step.
- To cook: Re-heat skillet to medium heat. Coat pan with oil. Cook each burger 4 min per side or until a good crust forms. Serve on buns with greens, tomatoes, sprouts, and other favorite burger toppings.
- Also try cilantro black bean burgers. Yum!
