Green Zucchini Curry


Original recipe from Vanilla & Spice.

Ingredients:
  • 1 T olive oil
  • 1/3 c green curry paste
  • 1/2 c broth
  • 2 cans reduced fat coconut milk
  • 1 zucchini, chopped*
  • 2 c fresh or frozen cauliflower, chopped*
  • 1 c fresh or frozen okra, chopped*
  • 1/4 c cilantro
  • 1 T lemon juice
  • *Or substitute 4 c chopped fresh or frozen veggies of choice
Directions:
  1. In a large pan over med heat, add oil, curry paste, and bouillon.  Fry 2 min.  Stir in water and coconut milk, bring to boil.  
  2. Add zucchini and cauliflower, reduce heat to low and simmer 8 minutes.
  3. Add okra and cilantro, heat through (about 1-5 min).
  4. Add lemon juice, taste and add salt as necessary.  Serve over lentil rice.
