Original recipe from Vanilla & Spice.
Ingredients:
- 1 T olive oil
- 1/3 c green curry paste
- 1/2 c broth
- 2 cans reduced fat coconut milk
- 1 zucchini, chopped*
- 2 c fresh or frozen cauliflower, chopped*
- 1 c fresh or frozen okra, chopped*
- 1/4 c cilantro
- 1 T lemon juice
- *Or substitute 4 c chopped fresh or frozen veggies of choice
Directions:
- In a large pan over med heat, add oil, curry paste, and bouillon. Fry 2 min. Stir in water and coconut milk, bring to boil.
- Add zucchini and cauliflower, reduce heat to low and simmer 8 minutes.
- Add okra and cilantro, heat through (about 1-5 min).
- Add lemon juice, taste and add salt as necessary. Serve over lentil rice.
