Blanching (peeling soft fruits)

Original recipe from Grow It Cook It Can It.

Ingredients:
  • fruit to peel
  • pan of boiling water
  • pan of ice water
Directions:
  1. Score the bottom of the fruit with a knife, making an X.  Drop fruit into boiling water, allow to boil 1-2 min watching for skin to start peeling at cut marks.  Remove from pan and plunge into ice bath.  It doesn't so much matter how long they're in the ice water as much as that they get there immediately upon removing them from the boiling water. 
  2. Peel fruit.  Skins should slip off, but have a knife handy for the difficult ones.  :)
