Yield: sauce for 1-2 pizzas, depending on your taste.
Ingredients:
- 1 T olive oil
- 1/2 onion, diced (or 1/2 t onion powder)
- 1 bell pepper, chopped (or 1 can diced green chilies)
- 1-2 cloves garlic, minced (or 1/2 t garlic powder)
- 2 cups (1 can) diced tomatoes
- 2-4 T powdered dry tomatoes, opt (for thickener)
- 2 t Italian seasoning
- 2 T Parmesan cheese, opt (for thickener)
- salt or garlic salt to taste
Directions:
- In a large frying pan over medium heat, heat oil. Add onion, garlic, and pepper (as well as additional vegetables if desired) and saute.
- Scrape vegetables into a blender and add tomatoes, seasoning, and Parmesan. Blend to desired consistency. Salt and pepper to taste.
- Spread on pizza.
