Zucchini Rounds


Original recipe from Eighty Twenty.

Ingredients:
  • 2 med zucchini, sliced in rounds
  • 2 T olive oil
  • 1/4 c Parmesan
  • 1/4 c bread crumbs
Directions: 

Preheat oven to 450.  Combine Parmesan and bread crumbs in a small bowl.  Toss zucchini in oil, then dip one at a time in crumb mixture and place on baking sheet.  Bake until crisp, 25-30 min.
