Split Pea Soup


Original recipe from A Year of Slow Cooking.

Ingredients:
  • 1 T olive oil
  • 1 onion, chopped
  • 2 c carrots & celery, chopped
  • 3 cloves garlic, minced
  • 2 c (16 oz) dried split peas
  • 5 c water
  • 1 T bouillon
  • 1/2 t garlic salt or salt
  • 1/2 t pepper
  • bacon bits to taste, opt
Directions:
  1. Rinse split peas.
  2. In a medium pan over medium heat, warm oil. Saute veg 5 min. Add remaining ingredeints and bring to a boil. Reduce heat to low and simmer 40-60 minutes.
  3. Combine in crock pot.  Cook on low 8-10 ours or high 4-6.  Serve with fresh bread.
