Peanut Butter Cheesecake

Original recipe from Food: Home of the Home Cook.

Ingredients:
  • 1 chocolate cookie pie crust
  • 2 blocks (16oz) cream cheese, softened
  • 3 eggs
  • 3/4 c brown sugar
  • 1/2 c peanut butter
  • 1/4 c whipping cream
  • 1/2 t vanilla
Directions:
  1. Preheat oven to 275.
  2. Pat crust mixture to cover bottom and up sides of dish.
  3. In a med bowl, beat cream cheese.  Add eggs, beat until smooth.  Add sugar, peanut butter, cream, and vanilla, beat until smooth.
  4. Pour filling onto crust.  Bake 80 min or until cake's internal temperature reaches 160.
  5. Let cool, then refrigerate until chilled and firm.  Top with optional peanuts, cookie crumbs, melted chocolate, etc.
