Veggie Tots

These are like tater tots, but can be made with many different vegetables.  We love them with a little fry sauce.

Ingredients:
  • 2 c finely chopped or grated vegetables (zucchini, cabbage, and/or cauliflower work well)
  • 1/2 c diced onion
  • 2 eggs
  • 1/2 c Parmesan or cheese of choice 
  • 1/2 c bread crumbs or lightly blended oats
  • 1/2 t Italian seasoning
  • 1/4 t each salt and pepper
Directions:
  1. Preheat oven to 400°F. Spray a muffin tin or 24-cup mini muffin tin with nonstick spray. Set aside.
  2. If using zucchini, place grated zucchini in a dishtowel and squeeze out the excess water. Combine eggs, cheese, breadcrumbs, and salt and pepper. Mix in vegetables.  
  3. Fill muffin cups and bake for 15-18 minutes or until the top is browned and set. Serve with ketchup, fry sauce, ranch, etc.
