Pictured: bbq black beans with a pita.
Ingredients:
- 1 T olive oil
- 1 onion, chopped
- 1 pepper, seeded and chopped
- 1 garlic clove, minced
- 1 can diced tomatoes
- 1/2-1 c BBQ sauce
- 1 t liquid smoke
- 2 T mustard
- 3 c cooked black beans (2 cans)--can substitute 2 c cooked lentils
- 2 c diced steamed broccoli (1 lb bag frozen)
Directions:
- In a saucepan, heat oil and saute onion, pepper, and garlic.
- Add remaining ingredients and heat through.
- Serve hot or chilled. Goes great as a side, over a bun like a sloppy joe, or as a baked potato topping.
