Couscous Tomato Salad


Original recipe from a magazine...I can't remember which!

Ingredients:
  • 1 c water
  • 3/4 c couscous
  • 1/4 c fresh mint, chopped
  • 2 T onion, finely chopped
  • 1 large tomato, diced
  • 2 T olive oil
  • 2 T lemon juice 
Directions:
  1. Boil water. Stir in couscous, cover and let sit 5 min. Fluff with a fork.
  2. Add 1 Tbsp lemon juice, 2 Tbsp olive oil, mint, red onion, tomato, and salt and pepper to taste. Serve with grilled chicken.
