Original recipe from a magazine...I can't remember which!
Ingredients:
- 1 c water
- 3/4 c couscous
- 1/4 c fresh mint, chopped
- 2 T onion, finely chopped
- 1 large tomato, diced
- 2 T olive oil
- 2 T lemon juice
- Boil water. Stir in couscous, cover and let sit 5 min. Fluff with a fork.
- Add 1 Tbsp lemon juice, 2 Tbsp olive oil, mint, red onion, tomato, and salt and pepper to taste. Serve with grilled chicken.
