Thai Pineapple Chicken Curry



Original recipe from All Recipes.

Ingredients:
  • 2 cups uncooked rice
  • 1 T olive oil
  • 1 pepper, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup red curry paste
  • 1 (13.5 ounce) can coconut milk
  • 1 c cooked diced chicken
  • 1 can pineapple chunks with juice
Directions: 
  1. Cook rice.
  2. In a medium pan over medium heat, warm oil. Add onions and peppers and saute 5 min. Add garlic and saute a minute longer. 
  3. Add remaining ingredients and heat through.
  4. Serve over cooked rice.
