Thai Pineapple Chicken Curry



Original recipe from All Recipes.

Ingredients:
  • 2 cups uncooked rice
  • 1 T oil
  • 1 pepper, diced
  • 1/2 onion, chopped
  • 1/4 cup red curry paste
  • 2 (13.5 ounce) cans coconut milk
  • 1 c cooked diced chicken
  • 2 T white sugar
  • 1 can sliced bamboo shoots, drained
  • 1 can pineapple chunks, drained
Directions: 
  1. Cook rice.
  2.  In a bowl, whisk together curry paste and 1 can coconut milk. 
  3. Heat a large frying pan over medium heat with oil.  Add pepper and onion and saute.  Add curry mixture and remaining coconut milk, sugar, and bamboo shoots. Simmer 15 min, add chicken and heat through.
  4. Remove from heat, stir in pineapple. Serve over cooked rice.
