Fried Rice

Pictured: red lentil rice with peas, onions, carrots, and broccoli.

Original recipe from family.

Ingredients:
  • 1-2 T olive oil
  • 2 c cooked rice, warm
  • 2 c chopped veg (fresh or frozen), may include sprouts
  • 2 eggs
  • 2 T sour cream
  • soy sauce to taste
  • pepper to taste
Directions:
  1. Heat oil in a large frying pan over medium. Add veggies and saute. Mix in with rice and keep warm.
  2. In a small bowl, whisk eggs with sour cream. Heat a little more oil in the pan and add eggs. Cook till scrambled. Mix with rice.
  3. Add soy sauce and pepper; mix well. Serve with more sauce on the side. Enjoy!
