Ingredients:
- 1-2 T olive oil
- 2 c cooked rice, warm
- 2 c chopped veg (fresh or frozen), may include sprouts
- 2 eggs
- 2 T sour cream
- soy sauce to taste
- pepper to taste
Directions:
- Heat oil in a large frying pan over medium. Add veggies and saute. Mix in with rice and keep warm.
- In a small bowl, whisk eggs with sour cream. Heat a little more oil in the pan and add eggs. Cook till scrambled. Mix with rice.
- Add soy sauce and pepper; mix well. Serve with more sauce on the side. Enjoy!
