Eggplant Wild Rice

Ingredients:
Directions:

  1. In a large pan over med heat, melt butter and 1 T olive oil.  Add eggplant and saute until tender, about 5 min.  Remove from pan.
  2. Add remaining 2 T olive oil to pan, saute onion, mushroom,s and garlic until tender, about 5 min.  Return eggplant to pan and add remaining ingredients.  
  3. Simmer over low heat 15 min, stirring occasionally.  Taste and adjust seasoning with salt and pepper if desired.
