Dinner in a Pumpkin


Pictured: two mini pumpkins and one medium pumpkin, decorated by our two-year-old.

Original recipe from family.

Ingredients:
  • 1 med pumpkin or several mini pumpkins 
  • 3 c lentil rice cooked with bouillon 
  • 1 c yogurt
  • 2 c chopped vegs (fresh or frozen), favorites include: celery, onions, green pepper, mushrooms
  • 1-2 T soy sauce
Directions:
  1. Cut off the top of the pumpkin and thoroughly clean out pulp and seeds.  Rinse inside and outside of pumpkin, pat dry.  
  2. Preheat oven to 350°F.  If desired, use a permanent marker to decorate pumpkin with face or other Halloween art.
  3. Saute vegetables in a large skillet.  Add soy sauce, soup, and cooked rice and mix well. 
  4. Spoon mixture into decorated pumpkin shell.  Replace pumpkin top and place entire pumpkin on a baking sheet.  Bake 1-2 hours or until inside meat of the pumpkin is tender.
