Original recipe from Delish. Perfect St. Patrick's Day dinner!
Ingredients:
- 1 onion, cut into wedges
- 1 (2-lb) corned beef brisket, with seasoning packet
- 4 c broth (or water + 1 T bouillon)
- 1 head cabbage, cored and cut into wedges
- 8-10 carrots, cut into sticks
- 6-8 potatoes, scrubbed and cut into wedges
- salt, pepper, and parsley to taste
Directions:
- In an instant pot, place onion, brisket with seasoning, and broth.
- Pressure cook for 90 minutes.
- Remove beef and onions from instant pot, leaving liquid. Keep beef warm.
- Add cabbage, carrots, potatoes, and seasonings and pressure cook 4 minutes.
- Transfer all to a serving dish and slice corned beef. Ladle remaining juices over top.
