Peanut Lentil Curry

Original recipe from family.

Ingredients:

  • 1 T olive oil
  • 1 onion, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 2 c lentils
  • 1 can tomatoes
  • 1 T bouillon
  • 1 T curry powder
  • 4-5 c water
  • 1 c cooked chickpeas (1 can)
  • 1/2 cup peanut butter
  • 1/4 c cilantro, chopped
  • salt to taste
  • opt: 1 c chopped greens

Directions:

  1. In a large pan over medium heat, warm oil. Saute onion, pepper, and garlic. Add lentils, tomatoes, spices, and water. 
  2. Turn heat to low and simmer about 50 minutes, until lentils are soft.
  3. Add last three ingredients and optional greens, and heat through just before serving.
