- 1/2 c quinoa or other cooked grain
- 1/4 c cooked beans or lentils
- fresh veggies
- frozen veggies
- sautéed veggies
- cooked chicken, ham, or venison
- cheese of choice
Directions:
- As desired, steam frozen veggies in microwave like peppers, peas, broccoli, or green beans, or sauté fresh or frozen veggies like onion, zucchini, and frozen greens. Simply slice up fresh veggies such as greens, radish, celery, or carrot.
- Scoop cooked quinoa in a bowl (we keep a mason jar of cooked quinoa in the fridge for this purpose. If your fridge supply is about to get old, throw it in with your oatmeal at breakfast and make a fresh batch for the fridge).
- Scoop beans over that (again, we keep a mason jar in the fridge of cooked black beans. They are a key ingredient in our breakfast smoothies, so they never have the chance to go bad).
- Gather up leftover cooked eggs, chicken, venison, or ham and dice over top.
- Scatter veggies over all and top with favorite salad topper like this yummy basil dressing, cheese, and/or croutons.
