Ingredients:
Pictured: coconut lentil curry with toast.
- 1 T oil
- 1 diced onion
- ~2 c diced veggies (carrots + celery are favorites)
- 2 cloves garlic, minced
- 2/3 cup orange lentils
- 2/3 cup green lentils
- 1 T bouillon
- 1 T curry powder
- 1 can lite coconut milk
- 3 c water
- salt / pepper to taste
- In a medium pan over medium heat, warm oil. Saute onion, veggies, and garlic.
- Add remaining ingredients and bring to a boil. May reserve coconut milk to add at the end of cooking, as a way to cool the soup for serving.
- Simmer 40-50 minutes. Add more water as desired. Enjoy with fresh bread!
