Greenie Scrambled Eggs

Original recipe from Food Network.

Ingredients:
  • 1 T olive oil
  • 1/4 onion, chopped
  • 2-4 leaves of greens ripped small, or to taste
  • 4 eggs*
  • 1 heaping spoonful of sour cream
  • salt and pepper to taste
  • opt: shredded cheese to taste
Directions:
  1. Heat oil in skillet over med heat.  Add onions, saute 1 min.  Add greens, saute until onions are soft.
  2. Meanwhile, whip eggs with a fork or whisk with sour cream.  Pour over cooked veggies.  Sprinkle with salt and pepper.  After 1 min, stir eggs.  Continue doing so until eggs are cooked and reach desired consistency.  Turn off heat.
  3. If using cheese, sprinkle on top of eggs and cover pan for 1 min.  Serve with biscuits, hash browns, etc.  Yum!
