Original recipe from Food Network.
Ingredients:
- 1 T olive oil
- 1/4 onion, chopped
- 2-4 leaves of greens ripped small, or to taste
- 4 eggs*
- 1 heaping spoonful of sour cream
- salt and pepper to taste
- opt: shredded cheese to taste
Directions:
- Heat oil in skillet over med heat. Add onions, saute 1 min. Add greens, saute until onions are soft.
- Meanwhile, whip eggs with a fork or whisk with sour cream. Pour over cooked veggies. Sprinkle with salt and pepper. After 1 min, stir eggs. Continue doing so until eggs are cooked and reach desired consistency. Turn off heat.
- If using cheese, sprinkle on top of eggs and cover pan for 1 min. Serve with biscuits, hash browns, etc. Yum!
