Ingredients:
- 1 T olive oil
- 1 onion, chopped
- 1 pepper, chopped
- 2 garlic cloves, minced
- 1 can Italian tomatoes
- 3 c broth
- 1 1/2 c dry lentils,* rinsed
- pepper to taste
Directions:
- Heat oil in a large pot over medium heat. Saute onion, pepper, and garlic. Add remaining ingredients, bring to a boil. Reduce heat to low and simmer about an hour, until lentils are soft and desired thickness is reached.
- Serve over brown rice, toast, pasta, baked potatoes, spaghetti squash, or as a side.
*Use red lentils for a saucier consistency.
