Original recipe from 5 Dollar Dinners
Ingredients:
- 2 (9-in) pie crusts
- 6 eggs
- 1 c milk
- 1 small onion, chopped
- 1 med summer squash, chopped
- 2 med tomatoes, chopped (or 1 can)
- 2 tsp dried basil
- 2 garlic cloves, minced
- salt/pepper to taste
Directions:
- Preheat oven to 350. Press dough into a 9x13 pan.
- In a medium bowl, beat eggs, milk, salt, and pepper. Dump in all chopped vegetables. Mix together, pour over dough.
- Sprinkle basil on top of quiche. Bake for 55 min or until spongy to the touch.
