Ingredients:
- 3 T butter
- 3 T olive oil
- 1 eggplant, peeled and cubed
- 1 onion, chopped
- 8 oz mushrooms, sliced
- 1 garlic clove, minced
- 1 c broth
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 tsp Italian seasoning
- 1 c yogurt or sour cream
- 1 c cooked wild rice
Directions:
- In a large pan over med heat, melt butter and 1 T olive oil. Add eggplant and saute until tender, about 5 min. Remove from pan.
- Add remaining 2 T olive oil to pan, saute onion, mushroom,s and garlic until tender, about 5 min. Return eggplant to pan and add remaining ingredients.
- Simmer over low heat 15 min, stirring occasionally. Taste and adjust seasoning with salt and pepper if desired.
