Original recipe from All Recipes. Makes a great breakfast or dinner!
Ingredients:
- 1 T olive oil
- 1 onion, chopped
- 1 lb shredded potato or frozen hash browns
- 1 c shredded greens
- 1 clove garlic, minced
- 3 eggs
- 1 c milk
- 1 1/2 t salt
- pepper to taste
- 1 c shredded cheese
Directions:
- Preheat oven to 350.
- In a medium cast iron skillet over medium heat, warm olive oil. Saute vegetables until tender.
- In a medium bowl, whisk eggs, milk and seasonings. Mix in cheese, then pour over vegetables.
- Place skillet in the oven and bake 45 min or until no longer jiggly.
