Pictured: bean broccoli soup with black beans and cauliflower.
Ingredients:
- 2 T olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 3-4 c chopped fresh or frozen broccoli (or broccoli/cauliflower mix)
- 1 1/2 c white or black beans, cooked (1 can)
- 2 1/2 c broth
- salt/pepper to taste
Directions:
- In a medium pan over medium heat, heat oil. Saute onion 5 min, add garlic and saute 1 min more.
- Add remaining ingredients, simmer until heated through.
